VARIETIES
- Girón, main variety.
- Small proportion of Syrah.
- Some references indicate approximately 80% Giró and 20% Syrah; the exact percentage must be confirmed by vintage.
VINEYARD AND SURROUNDINGS
Mediterranean mountain landscape, surrounded by forest and under the maritime influence of the Marina Alta. Giró is a historical variety from Alicante, of low production and closely linked to the traditional viticulture of the region.
DEVELOPMENT
- Spontaneous fermentation with native yeasts in open tanks.
- After fermentation, approximately half remains in stainless steel.
- The other half goes into new, high-quality French oak barrels.
- Separate aging for about a year, pairing and bottling.
WINE STYLE
Fruitful, expressive, juicy and friendly wine. La Giró brings a sweet and Mediterranean character; the Syrah strengthens the structure, the color and the spicy component. It is the more accessible and seductive style of the two wines.
ORIGINAL ORGANOLEPTIC PROFILE
- View: Intense red, with violet or garnet reflections.
- Nose: Ripe red and black fruit, plum, blackberry, Mediterranean herbs, spices and balsamic notes, with possible toasted notes.
- Taste: Juicy and enveloping, with gentle tannin, good concentration and a tasty, spicy and persistent finish.
SERVICE AND PAIRING
Temperature: 15-17 °C.
Pairings: meat rice, artisan sausages, lamb, Iberian pork, grilled meats, Mediterranean stews and semi-cured cheeses.
Observation: The project began to work in 2020, although the first harvests did not go to market. 2022 was the first commercialized vintage. Production, performance and graduation are pending official confirmation.
