VINEYARD AND SURROUNDINGS

Mediterranean mountain vineyard in the Pouets de Pedreguer subdivision, on calcareous and clay soils, between traditional terraces, forest and proximity to the Mediterranean.

DEVELOPMENT

  • Spontaneous fermentation with native yeasts in open tanks.
  • After fermentation, approximately half remains in stainless steel.
  • The other half goes into new, high-quality French oak barrels.
  • Separate aging for about twelve months, pairing and bottling.

WINE STYLE

A wine with a more classic, deep and structured cut than Vinya del Bosc. The Monastrell brings Mediterranean maturity, body and character; the Syrah adds freshness, color, spice and a more polished texture. The producer defines it as a particularly elegant Monastrell.

ORIGINAL ORGANOLEPTIC PROFILE

  • View: Deep cherry red, with maroon or violet rim.
  • Nose: Ripe black fruit, plum, blackberry, low forest, pepper, cocoa and balsamic notes, with toast and sweet spices.
  • Taste: Concentrated and structured, but elegant, with ripe tannins, breadth, black fruit and a long finish with a Mediterranean character.

SERVICE AND PAIRING

Temperature: 16-18 °C. It can benefit from a slight ventilation or decantation.

Pairings: baked lamb, goat, red meats, cheeks, baked rice, game, cured cheeses and intense Mediterranean cuisine.

Observation: Despite the word “White” in its name, it is a red wine; the name alludes to the plot or to its traditional denomination. Exact percentages, production and precise duration of aging are pending official confirmation.
