Verí d'alfalfa en verde oil was born after many years of making the Tossut blend, the estate's signature. As a result of the trend of producing monovarietal oils and of some chefs and colleagues who were clamoring for it, we produce the first monovarietal batch for the restaurant sector mainly, continuing in the same productive philosophy and of dignifying the different and excellent product, this premium organic extra virgin oil of harvest early is produced.
Monovarietal d’Alfafarenca olives, picked at the beginning of October in a late ripening variety, is considered a very early harvest in green-green. The production is agroecological like all the products we produce on the farm, always looking for an expression of the territory specific to the place, differentiating the product by its own characteristics and of the highest quality.
Just like the oil of the Tossut blend, this single-varietal Verí is produced in a neat and clean way, with a forced cold system (19º) and conservation at a controlled temperature.
Oil of sublime finesse, with virtually no acidity, little sweetness and an average balance of bitter and spicy in equal measure, light on the palate, with very high green fruitiness which gives it its own and distinguishable personality.
The variability of the oil itself is determined by the variety itself, expressing in the oil the climate of the year of production.
Currently the operation is certified by the Committee for Ecological Agriculture of the Valencian Community with operator code: CAECV CV5139 PV.
